Geometric alignment is equally critical. A door that is even slightly out of square with the oven opening does not merely leak heat — it also applies uneven lateral pressure to the porcelain enamel frame of the range, causing the finish to chip or craze at the contact points. This is one of the most expensive forms of cosmetic damage on a La Cornue and is entirely preventable with proper hinge service. We use precision leveling instruments and digital calipers to confirm that the door hangs perfectly square and plumb before considering the repair complete.

We also thoroughly inspect the door's peripheral gasket system. La Cornue oven doors use either woven fiberglass or stainless steel mesh gaskets that are compressed between the door and the frame to create the airtight thermal seal essential to the oven's performance. These gaskets are subject to compression set over time — they gradually lose their thickness and resilience until they can no longer adequately seal the gap. We test the seal using a smoke-pen airflow detector along all four door edges and replace the gaskets if any leakage is detected.
