The gas valve manifold is the central nervous system of your La Cornue range, precisely metering the flow of fuel to the high-BTU burners, the oven, and the broiler. La Cornue's engineering tradition demands the use of premium solid brass valve bodies with intricate internal passages machined to very tight tolerances — a specification that ensures smooth, precise fuel modulation but also requires specialized lubrication and maintenance to prevent the gradual hardening and sticking that develops over years of thermal cycling. If a control knob has become noticeably difficult to turn from simmer to high, if you detect the faint, distinctive scent of natural gas near the range, or if a burner produces an unstable flame at low settings, these are critical warning signs that demand the immediate attention of a qualified specialist.

Our gas valve service covers both manual plug-cock valves used on the cooktop burners and the solenoid-operated safety valves found in the oven gas circuit. For manual burner valves, our process involves carefully disassembling the valve bodies to access the tapered plug cones, where old, hardened lubricant accumulates and binds the mechanism. We remove every trace of this degraded grease and apply fresh, gas-rated high-temperature lubricant formulated to remain stable at the temperatures these valves experience. This single service restores the silky, frictionless feel to the control knobs that La Cornue owners universally describe as one of their range's most satisfying tactile qualities.

A critical secondary task during this service is the inspection and recalibration of the burner bypass screws. These small adjustment screws, located within the valve body, control the minimum gas flow at the lowest knob position — what is commonly called the "simmer" or "low-low" setting. If a bypass screw is set too low, the flame will extinguish itself at simmer, triggering the thermocouple safety to shut off the gas. If it is set too high, the range cannot achieve a true, gentle simmer. We calibrate every bypass screw to the precise gas flow rate specified for your exact range model and gas supply type.

Safety is the foundational principle of every gas valve service we perform. After every valve service or replacement, we apply a proprietary combustible gas detection solution and use electronic gas sniffers calibrated to detect concentrations as low as 10 ppm — well below any dangerous threshold — at every valve body, manifold joint, and gas fitting in the range. If any valve is found to be leaking past its seals or through its internal bypass, we replace it with an exact factory-specification part. La Cornue's brass valves are specifically sized for the volumetric gas flow of their high-BTU burner designs, and substituting a non-matching valve can create dangerous imbalances in gas-to-air ratios that produce incomplete combustion.
