Premium Service for Premium Appliances

The "Le Coup de Feu" cast-iron plancha — translated literally as "the burst of fire" — is one of the most distinctive and uniquely capable features of the La Cornue range lineup. Borrowed directly from the grand tradition of the professional French brigade kitchen, this thick, solid cast-iron cooking plate is designed to store and radiate a massive quantity of thermal energy, providing the kind of consistent, even searing heat that open-flame burners cannot replicate. It is the ideal tool for searing fish fillets with a perfectly even crust, preparing crêpes with uniform color, or maintaining a long, gentle, barely-trembling simmer that is impossible to achieve on an open burner. Because the plancha is operated at sustained high temperatures and is exposed to constant cooking residue, it requires a specific and technically informed approach to maintain at its best.

The central challenge of plancha maintenance is the management of the burner array located immediately beneath the cast-iron plate. These high-output burners operate for extended periods at elevated temperatures — conditions that accelerate the degradation of ignition wiring insulation, thermocouple elements, and gas valve lubricants. We remove the plancha plate entirely to service the underlying combustion system. We inspect and replace any heat-damaged ignition components, clean the burner venturi tubes, and calibrate the secondary air shutters — the same comprehensive burner service we apply to the open cooktop burners, adapted for the unique high-sustained-heat demands of the plancha circuit.

The safety thermocouple on the plancha burner circuit receives particular scrutiny during our service. Because the plancha is designed for long unattended cooking periods — a slow-simmered braise might run at the lowest heat setting for several hours — the reliability of the thermocouple's gas safety cutoff is absolutely essential. We test the thermocouple's millivolt output under live flame conditions and verify the correct operation of the associated gas safety valve, ensuring that the gas supply is immediately interrupted if the flame is extinguished.

Restoring the cast-iron cooking surface itself is a craft that our technicians approach with the same care as a blacksmith reseasoning a professional griddle. If heavy, carbonized residue has built up on the cooking surface or if the iron has developed pitting, we use controlled professional-grade mechanical polishing techniques to level the surface and expose clean iron substrate without removing more material than necessary. We then perform a multi-stage high-heat re-seasoning process using food-grade flaxseed or grapeseed oil to build a durable, natural polymerized non-stick barrier and to protect the exposed iron from the oxidation that causes rust.

What’s Covered

Every point in our service scope — nothing overlooked, nothing outsourced.

Carbon Scale Surface Removal: We use professional-grade mechanical polishing with progressively finer abrasive media to remove heavy carbonized grease scale from the plancha surface without gouging the iron substrate or undermining the surface flatness.

Multi-Stage High-Heat Re-Seasoning: Following cleaning, we perform a minimum three-stage re-seasoning process using food-grade polymerizing oil, building a bonded, non-reactive non-stick layer that protects the iron and provides superior food release.

Underplate Burner Manifold Overhaul: With the plancha plate removed, we fully service the burner array beneath it — clearing venturi tubes, calibrating air shutters, and replacing any heat-degraded ignition wiring and electrodes found within the high-temperature under-plate enclosure.

Thermocouple Safety System Verification: The plancha circuit's thermocouple is tested under live flame conditions for correct millivolt output and correct interaction with the gas safety solenoid, ensuring reliable automatic gas cutoff during extended unattended cooking.

Surface Flatness & Leveling Audit: We use a precision machinist's straight-edge and feeler gauges to verify that the plancha surface is flat to within 0.5mm across its full length, adjusting the range leveling feet as needed to prevent oil pooling and uneven results.

Thermal Consistency Mapping: After reassembly, we use an infrared thermal camera to map the surface temperature of the plancha across its full cooking area at both low and high heat settings, confirming even heat distribution before closing the service.
