Step-by-Step Guide

Verify with an Independent Thermometer

Place a quality oven thermometer on the center rack. Preheat to 350°F and allow to hold temperature for 20 minutes. Compare the thermometer reading to the display.

Run Multiple Readings

Take readings at 300°F, 375°F, and 425°F. A consistent offset (e.g., always 25°F below) suggests a calibration issue. Variable readings across temperatures suggest a failing sensor.

Check the RTD Sensor

The temperature sensor (RTD — Resistance Temperature Detector) is located at the rear of the oven cavity. A resistance reading outside of 1080–1090 ohms at room temperature indicates the sensor needs replacement.

Perform Calibration Offset Adjustment

Some La Cornue electronic control models allow a user-adjustable temperature offset through the control panel. Consult page 22 of your owner's manual for the specific key sequence for your model.

Call a Technician if Errors Persist

If temperature deviation exceeds 50°F in either direction, or if F1/F3 error codes appear during the test, discontinue use and contact a factory-trained technician.

Why Oven Calibration Matters More

Unlike conventional flat-walled ovens, La Cornue's arched cavity creates a natural heat circulation pattern driven by the shape of the vault. Even a modest calibration error of 25–30°F can disrupt this delicate thermal environment, leading to uneven browning and inconsistent bake times — particularly noticeable in delicate dishes like soufflés, pastries, and bread.

Common Causes of Temperature Drift

  • Aging RTD sensor — resistance drifts slightly over years of thermal cycling
  • Control board offset memory loss — after a power surge or PF error
  • Door gasket failure — heat escapes, sensor reads ambient mix instead of true cavity temp
  • Failing bake element (CornuFe models) — element cycles off prematurely

The 20-Minute Soak Test

Professional technicians use what is called a "soak test": preheat the oven to the target temperature, then monitor the thermometer every 5 minutes for 20 minutes after the preheat indicator turns off. A healthy La Cornue oven should maintain temperature within ±10°F of the set value. Swings greater than ±25°F indicate a mechanical or electronic fault.
