Step-by-Step Guide
Remove All Contents
Remove oven racks, the oven thermometer, any foil lining, and all cookware. Standard racks warp in pyrolytic temperatures. If your La Cornue came with special pyrolytic racks, those may remain.
Wipe Up Loose Debris
Remove any visible food debris or pooled grease from the oven floor and lower walls. Excessive grease during self-clean creates heavy smoke and, in rare cases, a small flash fire inside the cavity.
Activate Self-Clean Mode
Navigate to the self-clean function on the control panel. Select your desired cycle duration (typically 2.5 hours for light soil, 3.5–4 hours for heavy soil). Press Start.
Wait for Door Lock Confirmation
The motorized door latch will engage automatically within the first minute. The display will show CLN status. Do not attempt to open the door — the latch is motor-driven and forcing it damages the mechanism (F5 error).
Wait for the Full Cycle & Cooling
The oven will heat to approximately 880–900°F to incinerate residue to ash, then automatically begin cooling. The COOL indicator will display during cooldown. Do not open until the door unlocks automatically — this can take 1–2 hours after the heating cycle ends.
Wipe Out Ash Residue
Once completely cool and unlocked, use a damp cloth to wipe out the fine white/grey ash. For stubborn remaining residue, a second self-clean cycle (after full cooling) or manual spot-cleaning with a safe oven interior cleaner is appropriate.
What Pyrolytic Self-Cleaning Does
Pyrolytic cleaning is not steam — it is extreme heat. The oven cavity is raised to approximately 880°F (470°C) for a sustained period. At this temperature, all organic matter (food grease, sugar, proteins) is oxidized completely to carbon ash. What remains after cooling is a fine powder that can be wiped away with a damp cloth in seconds. The result is a spotlessly clean oven interior with zero chemical exposure.
How Often to Run Self-Clean
La Cornue recommends running the self-clean cycle no more than once every 6 weeks for typical home use. Running it too frequently places thermal stress on the door gasket, door hinges, and electronic components. For a heavily-used La Cornue, plan self-clean around your cooking schedule: run it the evening before a lighter cooking day, as the process + cooling takes 4–6 hours total.
Troubleshooting Self-Clean Issues
- F5 error during self-clean: Door latch motor failure. Do not force the door. Call a technician.
- CLN flashing and cycle stops: High temperature safety thermostat tripped. Allow to cool, then investigate excessive grease accumulation.
- E15 error: Pyrolytic element fault. Technician required before next self-clean use.
- Excessive smoke during cycle: Normal for first use or after heavy grease accumulation. If flame appears, do not open door — turn off the range at the circuit breaker and allow to cool naturally.
